Leafy vegetables also called leafy greens , salad greens , pot herbs , vegetables green are plant leaves eaten as vegetables .Neraly one thousand species of plants with edible leaves are known so far . Most of them are often of short lived herbecious plants . Leafy vegetables are the bank of nutrition that are needed for us .As they contain many typical plant nutrients ,they are important for our health . Leafy vegetables are typically low in calories and fat and high in protein , dietry fibre and , vitamin C , pro - vitamin , vitamin A , carotenoids , foliate , manganese and vitamin K .A person with regular leafy vegetables in his diet can became the healthiest person . Green leafy vegetables can be eaten in different ways as boiled , raw , Stir – fried , stewed , steamed. Green leafy vegetables such as lettuce or spinsch can as be eaten as raw for example in sandwiches or salad . Green leafy vegetables are very important to maintain a smart and the healthy life but due to increasing demand of people towards meat items people are forgetting the importance of leafy vegetables . Due to the lack of proper knowledge on cooking and eating methods a large amount of nutrition from them is being wasted . So time has come to became aware about the proper use and management of the leafy vegetables . Here are some ways to reduce the increasing scenario of leafy vegetables losses . 1. Cook properly without destroying its nutrition . 2. The shelf life of leafy vegetables is very low .s o we must try to reduce post harvest losses by keeping them moist and plscing in shodow areas . 3. We can also use the by products from leafy vegetables to make compost manure which can be further use to grow them . 4.
