Holiday Meals

Hi everyone, 

The holiday season is here in the US! With celebratory dinners, it can be a bit difficult to maintain your eco-conscious vegan/vegetarian diet (if you have one). So, here are two of my personal favorite recipes that are vegan. I will also add the links to both of the recipes. Who knows, maybe after trying these recipes, your friends and family might want to take on a vegan diet as well, or at least eat more plant-based meals.

Recipe #1 - Vanilla Custard [https://sarakidd.com/easy-thick-vegan-vanilla-custard/] 
For this simple recipe, you will need soy milk, sugar, lemon juice, cornstarch, vanilla extract, water, salt, and yellow food colouring. Mix all of these ingredients on the stovetop in a saucepan until the mixture thickens. And, you will have a 100% vegan custard that is just like the regular one. 

Recipe #2 - Zucchini Noodle Soup [https://www.twopeasandtheirpod.com/spring-vegetable-zucchini-noodle-soup/]
For this easy recipe, all you will need is oil, onions, garlic, vegan chicken substitute, vegetarian broth, carrots, oregano, basil, salt, zucchini noodles cut from a zoodle maker, ground white pepper, and rosemary. First, boil your vegetables, cut your zucchinis, cook the chicken substitute, and fry your onion, garlic, and zucchinni noodles with the basil, oregano, and rosemary as the spices for a maximum of 10 minutes. Put the vegetarian broth in a saucepan, combine the vegetables, and add the spices. Let this simmer for 30 minutes. Best served warm in a big container on a gloomy day.

These taste good when you have the satisfaction of knowing that you made a delicious, healthy meal all while conserving our planet!!

    As the demand for vegan food is increasing, I hope various vegan food recipes will be shared.
    I want to make a habit of reducing meat and increasing vegetables for health as well as the environment.
    Recipes you mentioned above are not that hard so one day I will try these foods.

    Thank you for sharing your delicious recipes!
    Vegan diet is helpful for reducing meat consumption.
    Livestock industry is one of the main causes for powerful CO2 emission.
    Vegan diet, or alternative meat such as soy meat are good ways to solve such problem.
    Moreover, they sound so tasty and healthy!
    Hopefully I can try to cook them someday :)
