Food wastage :major challenge in hospitality industry

As we all know that 1/3rd of food produced for human consumption , about 1.3 billion tonnes per year , is wasted globally . I would like you to go through the below link to know the hard , bitter facts behind food wastage:

This is sheer wastage of resources  including water, land, energy, labour and capital . The impact of food waste is not only financial but social and environmental  as well. Environmentally, food waste leads to wasteful use of chemicals such as fertilizers and pesticides more fuel used for transportation and more rotting food, creating more methane – one of the most harmful greenhouse gases that contributes to global warming and climate change.


The causes of wasted food are varied , and occur at the stages of production, processing, retailing and consumption. Like other waste, food waste can be dumped, but it can also be fed to animals, or it can be biodegraded by composting or anaerobic digestion, and reused to enrich soil. Dumping food waste in a landfill causes odour as it decomposes.  Food waste can be composted at home.


But to be honest , most of the food waste /solid food waste comes from institutions like hotels , restaurants.  If these institutions handle the issue of food wastage effectively , we can confidently say that a big portion of wastage would be reduced.

 

Last week I read that one of  the local hotel in UAE , Beach Rotana Hotel Abu Dhabi, reaffirmed their commitment to a sustainable and eco-friendly environment , on the eve of World Environment Day  by implementing and inaugrating the first ever food composting machine within the Rotana group and the Abu Dhabi region. This  composting machine will help a lot in reducing the percentage of solid food waste to landfill by upto 85-90% and would convert this waste to organic fertilizer. This machine operates on the aerobic composting method and needs 24 hours for this process from the last input to the machine.

This machine is energy efficient, as it is controlled by fully automatic and smart systems. Furthermore, it comes with two deodoriser units that control the moisture and odor produced by food waste using carbon nano-process technologies.

I am glad that this hotel took this step to tackle food waste which  is one of the major challenges among the hospitality industry. This will set an example for other hotels and I hope that other hotels too follow this best practice of Beach Rotana Hotel.

    Your report has come on apt time Arushi, Food wastage increases specially during Ramadan in UAE. More hotels must join Beach Rotana Hotel for food composting. AS the Ramadan is approaching in July2014.
    Land Fills must be avoided at all costs.

    Well said, Arushi. We prefer bigger portion in restaurants and hotels so they serve bigger plates and it leads to more food wastage. So we need to change our thoughts toward mindful eating. Thank you for the article :)
